Whole Wheat Spice Pound Cake

Ingredients
- ¾ cup Whole Wheat flour
- ¼ cup Whole Grain oat flour
- ¼ cup vegetable oil
- ¼ cup soy yogurt (or Low – Fat yogurt)
- 1 tbsp honey
- 1 egg white
- ½ tbsp. liquid stevia sweetener
- ¼ tsp cardamom pods crushed (just the seeds from the inside)
- ¾ tsp ground cinnamon
- 1 anise star (just the seeds from inside, crushed)
- 8gr baking powder








Directions
1 – Preheat the oven at 170°C
2 – In a bowl, beat together yogurt, honey, liquid stevia, spices and once it is well blended add the vegetable oil and continue mixing until it is all combined.
3 – Using a hand mixer, whisk the egg white until soft peaks are formed.
4 – In a separate bowl, mix the flour and the baking powder and add it to the bowl containing the wet ingredients. Beat them together until they are completely combined.
5 – Carefully fold in the egg white into the cake batter with a spatula making circular movements in one direction.
6 – Pour the cake batter into a cake pan, put it on the oven and bake it for 30 – 35 min.
