Blueberry Streusel Muffins



Blueberry Streusel Muffins
Ingredients (For 10 large muffins or 20 - 22 regular muffins)

Muffins
- 3 ½ cups all-purpose flour
- ½ cup granulated white sugar
- ½ cup brown sugar
- 1 cup milk
- 1 tbsp vineger
- ½ cup vegetable oil 

- 2 eggs
- 1 tsp grounded cinnamon
- 1 tsp vanilla extract
- ½ tsp salt
- 2 tsp baking soda
- 2 ½ tsp baking powder
- 1 cup fresh blueberries (or frozen)

Streusel
- ½ granulated sugar
- ¼ cup melted butter
- cup all-purpose flour
- ½ tsp cinnamon (optional)



Directions 

Muffins
1 – In a bowl, mix flour, baking powder, baking soda, cinnamon and salt.
2 – In a separate bowl, beat together eggs and sugar until the mixture becomes pale and fluffy. Then, add vegetable oil and milk and whisk until completely combined.
3 – Combine the flour mixture with the wet mixture and mix until the batter is homogeneous (try not to overmix).
4 – Carefully fold in blueberries.
5 – Preheat the oven at 200°C
6 – Chill the batter on the fridge for 30 min.
7 – Fill in muffin cups to till the top and sprinkle the streusel over them.
8 – Bake the muffins for 20 – 25 minutes.

Streusel
1 – Place all the ingredients in a bowl and using a fork combine them.
